These Cottage Cheese Egg Bites are a fluffy, high-protein breakfast similar to the popular coffee-shop version—but much easier and more affordable to make at home. The cottage cheese blends into the eggs, creating a creamy texture while adding extra protein.
They are perfect for make-ahead breakfasts, brunch, or quick weekday meals.
Ingredients
6 large eggs
½ cup cottage cheese
½ cup shredded cheese (cheddar, gruyère, Swiss, or mozzarella)
¼ cup diced vegetables (optional: spinach, red pepper, mushrooms, or onions)
Salt and pepper to taste
Cooking spray or butter for the pan
Instructions
Preheat oven to 350°F.
Grease a muffin tin with cooking spray or butter.
In a blender, blend eggs and cottage cheese until smooth and creamy.
Stir in shredded cheese and vegetables.
Season with salt and pepper.
Pour mixture into muffin cups, filling about ¾ full.
Bake for 18–22 minutes, until set in the center.
Let cool for a few minutes, then remove and serve.
