Cottage Cheese Egg Bites (High-Protein Breakfast)

These Cottage Cheese Egg Bites are a fluffy, high-protein breakfast similar to the popular coffee-shop version—but much easier and more affordable to make at home. The cottage cheese blends into the eggs, creating a creamy texture while adding extra protein.


They are perfect for make-ahead breakfasts, brunch, or quick weekday meals.


Ingredients

  • 6 large eggs

  • ½ cup cottage cheese

  • ½ cup shredded cheese (cheddar, gruyère, Swiss, or mozzarella)

  • ¼ cup diced vegetables (optional: spinach, red pepper, mushrooms, or onions)

  • Salt and pepper to taste

  • Cooking spray or butter for the pan


Instructions

  1. Preheat oven to 350°F.

  2. Grease a muffin tin with cooking spray or butter.

  3. In a blender, blend eggs and cottage cheese until smooth and creamy.

  4. Stir in shredded cheese and vegetables.

  5. Season with salt and pepper.

  6. Pour mixture into muffin cups, filling about ¾ full.

  7. Bake for 18–22 minutes, until set in the center.

  8. Let cool for a few minutes, then remove and serve.
