Healthy Single-Serving Crustless Pumpkin Pie

Ingredients
¼ cup pumpkin puree—not pumpkin pie filling
2 tablespoons beaten egg, or 1 small egg
2 tablespoons maple syrup or monk fruit sweetener, adjusted to taste
2 tablespoons light cream, almond milk, or coconut milk
½ teaspoon pumpkin pie spice
¼ teaspoon vanilla extract
Pinch of salt
Cooking spray or a small amount of butter for the ramekin
Instructions
Preheat the oven to 350°F.
Lightly grease a small ramekin or 5-inch pie plate with cooking spray or butter.
In a small bowl, whisk together the pumpkin puree, egg, maple syrup, milk or cream, pumpkin pie spice, vanilla, and salt until smooth and completely combined.
Pour the pumpkin mixture into the prepared ramekin.
Bake for 30 to 40 minutes, or until the edges are firm and the center is just set. A toothpick inserted into the center should come out mostly clean.
Allow the pumpkin pie to cool for at least 15 minutes before serving. Enjoy it warm, or refrigerate it for a firmer, custard-like texture.
